The slow café revolution

When Marta opened a café that refused to serve coffee in takeaway cups, friends warned her she'd be closed within a month. Two years on, queues form down the street every Saturday. Customers, she explains, weren't really looking for faster service; they were looking for somewhere to slow down. The decision to ban screens has been just as polarising. Yet the data is unambiguous: average visit length has doubled, and so has the bill. 'Cafés used to compete on speed,' she says. 'Now the best ones compete on permission to pause.'
